Gluten Free Pizza


Yea!! I finally found a gluten free flour recipe that I can find ingredients locally and makes a great pizza. Had my first pizza (sickness free) in many long months. Now I'll try this flour for other recipes and see if it works for them as well.

Side Note: this GF flour recipe does NOT work for chicken and dumplings so don't try it. :)






Gluten Free Flour Mix
2 C white rice flour
⅔ C potato starch flour
⅓ C tapioca flour

Combine all ingredients and store in an airtight container. Great for pizzas!

Pizza Dough
2 C flour
½ C Gluten Free Cornmeal
1 t sugar
1 t salt
1 t Italian Seasoning
2 ¼ t or 1 package yeast (rapid rise)
1 C hot water
2 T oil

Combine flour, cornmeal, sugar, salt and italian seasoning in a bowl. Add yeast to hot water (105-110 degrees, which is hot tap water) and let sit about 3 minutes. Add to flour mix and combine into a ball. Add oil and knead til combined. Let it set in bowl for 20 minutes covered with a cloth in a warm place if available to help yeast. Stretch onto greased baking sheet or onto an ungreased pizza stone (place pizza stone in oven when you turn it on). Bake 450 for 5 – 10 minutes (baking sheet 5 min, stone is 10). If you do more than 1 pizza at a time then it could take longer. Add pizza sauce and toppings. Bake 5-10 minutes more or until cheese is melted and crust is turning brown.

Pizza Sauce
12oz tomato paste
1 t crushed red pepper
1 t oregano
1 t basil
1 t Italian seasonings
1 t onion powder
1 t garlic powder
3 T brown sugar
3 T parmesan cheese

Mix 1 can of water with tomato paste. Heat at medium temperature and add all remaining ingredients. Stir til heated and mixed then turn temperature back to low for about 5 minutes or until all ingredients are blended. Taste and add more ingredients if needed.

Yield: 2 pizzas
